The Rhubarb Strawberry UNSmash (Non-Alcoholic)

Ready to get UNsmashed? Bourbon and fresh strawberries are match made in cocktail heaven in this springtime cocktail and it's guaranteed to keep a spring in your step.


  • 3 oz The Spirit of Bourbon
  • 1-1/2 oz strawberry rhubarb syrup*
  • 3⁄4 oz lime juice
  • 2 fresh strawberries hulled and quartered
  • 2 dashes of orange or rhubarb bitters
  • 1⁄4 oz Aqua fava
  • Ground black pepper


  • In a shaker, muddle the strawberries with the strawberry/rhubarb syrup
  • Add the remaining ingredients,except the club soda, and shake with ice
  • Strain into an ice filled highball glass, top with soda and garnish with a pinch of black pepper and a mint sprig

*Strawberry/rhubarb syrup:


  • 1 pound of strawberries
  • 1 pound of rhubarb
  • 1 cup of water
  • 1 cup of white sugar
  • 5 slices peeled ginger root Zest and juice of 1 lime


  • Stem and half the strawberries
  • Chop the rhubarb into 1” pieces
  • Put everything into medium saucepan and add the water and sugar
  • Bring to a boil and simmer for 20 mins or until the fruit has fallen apart
  • Let it steep and cool in the pan
  • Strain out the fruit using a fine mesh strainer or a piece of cheesecloth inside a sieve. Let gravity do its work here to get more syrup
  • Save the solids to put on ice cream or on your toast in the morning! It will stay good in the fridge for up to 3 weeks.
