A classic pre-dinner cocktail with winter citrus and The Spirit of Bourbon.
3 oz The Spirit of Bourbon
0.75 oz Meyer lemon juice
0.75 oz simple syrup
0.25 oz Aquafaba (the strained liquid from a can of chickpeas)
In an iced cocktail shaker, add all ingredients and shake well. Strain over ice in a bucket glass or up into a coupe glass, then garnish with a cherry and Meyer lemon peel.
