4pm cocktails and still sharp for a night of fun? Yep that's the High Tea-Quila Cooler.
2 1⁄2 oz The Spirit of Tequila
3⁄4 oz Earl Grey tea syrup*
1⁄2 oz Lemon Juice
1 oz ginger beer
Splash soda to taste
Combine all ingredients in a 16oz mason jar. Stir and taste for sweetness. Garnish with mint sprig and lemon wedge.
*To make the Earl Grey syrup: Bring 1⁄2 cup of sugar and 1⁄2 cup of water to a boil. When sugar is dissolved steep 2 Earl Grey tea bags for 20 mins and then strain the syrup. Store for up to a month in the refrigerator.
