4pm cocktails and still sharp for a night of fun? Yep that's the High Tea-Quila Cooler.
Ingredients:
- 2 1⁄2 oz The Spirit of Tequila
- 3⁄4 oz Earl Grey tea syrup*
- 1⁄2 oz Lemon Juice
- 1 oz ginger beer
- Splash soda to taste
Method:
- Combine all ingredients in a 16oz mason jar
- Stir and taste for sweetness
- Garnish with mint sprig and lemon wedge.
*Earl Grey syrup:
- Bring 1⁄2 cup of sugar and 1⁄2 cup of water to a boil
- When sugar is dissolved steep 2 Earl Grey tea bags for 20 mins and then strain the syrup
- Store for up to a month in the refrigerator
