Ingredients

3 oz The Spirit of Bourbon
1 ½ oz strawberry rhubarb syrup*
- 3⁄4 oz lime juice
- 2 fresh strawberries hulled and quartered
- 2 dashes of orange or rhubarb bitters
1⁄4 oz aquafaba
ground black pepper
Method
In a shaker, muddle the strawberries with the strawberry/rhubarb syrup
Add the remaining ingredients, except the club soda, and shake with ice
Strain into an ice filled highball glass, top with soda and garnish with a pinch of black pepper and a mint sprig
Recipe Note
*Strawberry/rhubarb syrup:
Ingredients:
- 1 pound of strawberries
- 1 pound of rhubarb
- 1 cup of water
- 1 cup of white sugar
- 5 slices peeled ginger root
- Zest and juice of 1 lime
Method:
- Stem and half the strawberries
- Chop the rhubarb into 1” pieces
- Put everything into medium saucepan and add the water and sugar
- Bring to a boil and simmer for 20 mins or until the fruit has fallen apart
- Let it steep and cool in the pan
- Strain out the fruit using a fine mesh strainer or a piece of cheesecloth inside a sieve. Let gravity do its work here to get more syrup
- Save the solids to put on ice cream or on your toast in the morning! It will stay good in the fridge for up to 3 weeks.
