Hereโs a show stopping gin infusion brimming with Meyer lemons, ripe peaches, lemongrass and mint. It tastes like summer in a glass with a splash of tonic or your favorite NA sparkling wine.
Ingredients

The Spirit of Gin
- 2 stalks of lemongrass
- 1 ripe peach sliced
- 1 Meyer lemon thinly sliced
- A big sprig of mintย
- Tonic Water or NA Sparkling Wine
Method
Gin Infusion
Take 1 stalk of lemongrass and cut into angled slices.
- Cut the other stalk into 4-5 inch stir sticks.
- Add the thin cut slices of lemongrass and mint sprig to the bottom of a ball jar or a glass pitcher.
- Muddle together, then add the other ingredients to the jar.
- Add The Spirit of Gin and allow to infuse for at least a couple of hours or overnight in the fridge.
Peachy Keen
Add a few ounces of the infused gin to an iced glass.
Add a splash of your preferred bubbles.
Garnish with the lemongrass stir stick.
