Here’s a show stopping gin infusion brimming with Meyer lemons, ripe peaches, lemongrass and mint. It tastes like summer in a glass with a splash of tonic or your favorite NA sparkling wine.

Ingredients
- The Spirit of Gin
- 2 stalks of lemongrass
1 ripe peach, sliced
1 Meyer lemon, thinly sliced
- A big sprig of mint
Tonic Water or Sparkling Wine
Method
Gin Infusion
Cut 1 lemongrass stalk into angled slices; reserve the second as 4–5 inch stir sticks.
In a ball jar or pitcher, muddle the sliced lemongrass and mint.
Add peach slices and lemon, then pour in The Spirit of Gin.
Infuse for a few hours or overnight in the fridge.
Peachy Keen
Add a few ounces of the infused gin to an iced glass.
Top with tonic or sparkling wine.
Garnish with the lemongrass stir stick and a big sprig of mint.
