The rosemary-ginger maple syrup brings this sour a touch of autumn with its rich colors and flavors, adding a delicious herbal depth to this non-alcoholic bourbon cocktail that Steve Turner originally created for Watershed in Mill Valley, California.
Ingredients

2 ½ oz The Spirit of Bourbon
- 1 oz Fresh Squeezed Lemon Juice
- ¾ oz Rosemary & Ginger Maple Syrup*
1 Egg white or ½ oz Agua Fava (optional)
Rosemary Sugar Salt**
Method
Add all ingredients to a cocktail shaker.
- Either dry shake or add a couple of ice cubes to the shaker to fluff up your cocktail.
- Rim your rocks glass with Rosemary Sugar Salt** and add ice to the glass.
Strain into the glass and garnish with a lemon slice and a rosemary spear.
Recipe Note
*Rosemary Ginger Maple Syrup
Add 1 cup maple syrup, 1 inch fresh chopped ginger, and rosemary leaves (2 spears stripped). Blend until smooth then strain out the solids. Refrigerate until ready to use.
**Rosemary Sugar Salt
With a mortar & pestle, grind 2 tbsp of dried rosemary until it’s a powdery consistency. Add 2 tbsp of cane sugar and 2 tbsp of kosher salt then mix together. Yep, it’s some work, but this rim makes the whole cocktail work!
